  2. In a large bowl, season shrimp with paprika, garlic powder, oregano, cumin, red pepper flakes, and salt. Toss gently to combine.

  3. In a large bowl, combine Cilantro, Jalapeno, Lime zest, Line juice, shredded cabbage, salt and sour cream. Stir well to combine and refrigerate to chill.

  4. Using 2 bamboo or metal skewers poke through the top and bottom of the shrimp and push down to the bottom of the skewer. Continue to add to the skewer, 4 shrimp per skewer, so they have room and cook evenly.

  5. Right before you put the shrimp on the grill, brush each skewer with a generous amount of avocado or olive oil, to prevent sticking.

  6. Grill over high heat for 3 minutes, brush the top side with more olive oil, flip, and let cook for an additional 2 minutes. Remove from skewers & set aside for taco assembly.

  7. To assemble the tacos on the tortilla. Add a little of the slaw mixture, followed by 4 shrimp, then top with a little more slaw, the cilantro salad dressing and a squeeze of lime juice.

Notes: (a.k.a. “my two cents!”)

  • Some of the ingredients keep this recipe in line with a Paleo diet.  Ingredients that you do not commonly use, substituted as you wish.
  • We use 12 tortillas for 12 tacos, original recipe calls for 24, because they double them up per taco. We do not, because we try to stay away from excess carbs and glutens.
  • Paleo tortillas…I will be posting a recipe for these little gems! Stay tuned…they rock!
  • For slaw variations, you can use yogurt in place of sour cream, but I cook for someone who loves her sour cream! It does add a nice richness, making this a nice treat.
  • Cilantro Dressingis from Trader Joe's!   Try it!    It is low cal, flavorful and just plain packed with awesome freshness.
  • These Shrimp Tacos pair great with a nice Citrus laced IPA or a Summer Shanty!
