Roasted cauliflower steaks will bring color and delicious flavor to your side dish.  Cauliflower now comes in green, yellow, purple and the old standard white.  This makes for nice splash of color to your table and meal.

Make sure to evenly and sparingly cover the steaks with the oil, but do not skimp on the seasonings!   Changing up the seasonings will add variety to this great vegetable, that I am sure will be on your table more once you try it roasted.  This is a 1 point Weight Watchers Veggie!

With the addition of the new colors of cauliflower, the saying eat all the colors of the rainbow, seems so much more do-able.

Instructions
  1. Place head stem side down onto the cutting board Cut ½ inch slices of the head – I typically get 4 slices per head. Save the ends, I have a tip for those.

  3. Place the slices on a foil lined cookie sheet (I do not like a lot of clean up.) Make sure to leave a little room between the slices, so they roast and do not steam.
  4. Drizzle the slices with half the melted butter spread and then sprinkle with half the seasonings. Turn over all the cauliflower steaks and repeat with the second half of the melted butter spread and seasonings.
  5. Roast in a 350 degree oven for 15 to 20 minutes.
